Amritsari aloo kulcha recipe on tawa | Aloo kulcha recipe | Kulcha recipe

Aloo kulcha is the most loved Punjabi dish especially, in Amritsar. I have been to the famous kulcha wala in Amritsar a number of times, so sharing the authentic recipe with you guys here.
He sells kulchas from generations and people wait for hours for their turn. He sells only aloo kulchas. Here also, I am sharing aloo kulcha recipe. You can make variations as per your wish.

Equipment

  • Mixing bowl
  • broad base bowl for kneading the dough
  • Iron tawa

Ingredients
  

For dough

  • 250 gms Maida
  • 2 tsp Sugar
  • 1 tsp Salt
  • 1/2 tsp Baking Powder
  • 30 gms Butter

For stuffing

  • 6 Aloo Boiled and mashed
  • 1 Onion / pyaz Chopped
  • 1 green chili / hari mirch chopped
  • 1 inch ginger/ adrak chopped
  • 1/2 tsp Dhania seeds crushed/ pisa hua
  • 1/2 tsp Kali mirch crushed/ pisi hui
  • 1/2 tsp Lal mirch powder
  • 1 tsp Anardana or amchur roughly crushed/ darad kiya hua
  • 1 tsp Roasted cumin seed powder/ Bhuna jeera Powder
  • 1/2 tsp Black salt/ Kala namak
  • 1 tbsp Kasuri methi
  • Coriander leaves Chopped
  • 2 tbsp Maida

Instructions
 

For dough

  • Add all the ingredients mentioned under For Dough in a flat based big mixing bowl and knead a sticky dough.
  • Now, add 10gm butter and knead it again for 3-4minutes.
  • Cover it with a lid and keep it at rest for 30 minutes.
  • After half an hour, sprinkle around half cup of maida on the platform and spread the kneaded dough like an ½ inch thick roti.
  • Layer it with a generous amount of butter or ghee.
  • Roll it like a rolly polly. Keep it in a refrigerator for around 10 minutes.
  • After half an hour, take it out of the refrigerator and cut it in 6 pieces with the help of a knife.

For Stuffing

  • In a mixing bowl, mix all the ingredients mentioned under For Stuffing properly with the halp of your hands.

Making kulchas

  • Take a portion of dough on your palm and flatten it a little with the help of your thumb.
  • Place a ball of aloo stuffing on it.
  • Close the edges making pleats to the center, just like we make stuffed parathas.
  • Sprinkle some sesame seeds and fresh chopped coriander, press it with a light hand.
  • Flatten it with your fingers in the shape of a paratha. Please avoid using the rolling pin, if you can.
  • Turn it upside down and brush it with the salty water. ( take some water in a bowl and add 1 tsp of water in it. Mix it)
  • Place this kulcha with water side on a hot tawa and press gently.
  • Allow it to cook for a minute. Afterwards, flip the tawa upside down and cook the kulcha directly on the flame till it turns golden brown.
  • Finally, grease it with a generous amount of butter or ghee and serve it hot with Amritsari Chole Masala.

Notes

Being my in-laws hometown in Amritsar, I know how Amritsari aloo Kulchas are popular there. People there have different level of love for these and my husband too.. ;)
So, I am sharing the authentic recipe directly from the streets of Amritsar, Punjab. Give it a try..
Some points:
  • Most importantly, kneading dough is the main key in this recipe. 
  • Secondly, this recipe demands the use of generous amount of butter or ghee. 
  • Thirdly, flatten the kulcha with the help of your hands, if possible.
  • Finally, heat up the tawa before placing kulcha on it.
