Kashmiri Soy Paneer Gravy for diabetes

The traditional name for kashmiri paneer gravy is Lyodur Tschaman. Here, Lyodur means yellow (turmeric)and Tschaman is cottage cheese. it is a famous traditional rich recipe of kashmiri pandits.

This recipe, traditonally, uses a lot of whole spices. And, the gravy is of the rich texture.

Kashmiri Soy Paneer Gravy for diabetes | Lyodur Tchaman

Lyodur, literally means yellow (turmeric) and Tschaman means cottage cheese or paneer. The dish is basically, paneer cooked in creamy turmeric gravy using curd, heavy cream, and many other spices. But, here we are making the dish for diabetes. so we will replace heavy cream with vegan curd.
Also, we will replace cottage cheese with Soy paneer to make it more protein-rich. 🙂
Kashmiri paneer gravy is very popular among Kashmiri vegetarians. It is a very quick and easy-to-make recipe. Is a 5-minute recipe that needs no preparations.

Equipment

  • 1 wok/ kadhai

Ingredients

  • 100 gm Soy paneer/ tofu cut in cubes
  • 1 tsp mustard oil
  • 1/2 tsp asafoetida/ hing
  • 1 tsp dry ginger powder
  • 1 tsp fennel powder/ saunf
  • 1/2 tsp turmeric/ haldi
  • 2 Kashmiri red chillies
  • 1/2 cup whisked vegan curd
  • 1 tsp black peppercorns coarsely ground

Instructions

  • Firstly, in a wok or kadhai put oil. Heat the oil to the smoking point. Switch off the flame. Allow the oil to cool.
  • When the oil is warm, add hing, dry ginger powder, fennel powder, turmeric, and red chilies.
  • Cook for a couple of seconds. Now, add vegan curd.
  • Give it a good mix and add tofu.
  • Stir continuously so that the curd does not curdle.
  • Add salt and let it cook for another 5 minutes. Stir continously .
  • You can add a little water to adjust the consistency.
  • Add black pepper. Mix well. cook it fir another 2 minutes.
  • Finally, garnish it with coriander.
  • Serve hot with chapati or tandoori roti.

Kashmiri Paneer gravy for diabetes or you can say Kashmiri soy paneer gravy for diabetes is a 5-minute recipe that needs no initial preparations. Lyodur Tchaman, the actual Kashmiri name is traditionally a paneer delicacy with rich creamy gravy. But, here we are making the healthy version of that traditional dish.
So, we have made certain replacements:
  • Cottage cheese/ paneer with Tofu/ soy paneer
  • Curd with vegan curd
  • skipped heavy cream
You can make your choices as per your wish. Also, you can add cream to make it a traditional creamy Kashmiri delight. 
  • Firstly, the oil should not be very hot. As the spices will get burnt.
  • Secondly, whisk the curd properly before adding to avoid curdling.
  • Also, keep the flame low while adding curd. 
  • Furthermore, stir continuously while and after adding curd to avoid curdling.
