Eggless vegetable omelet has almost same taste and texture as that of an egg omelet. It can be served as breakfast or snack. It is mainly for those who follow vegetarian diet and don’t like eggs.
To be more closer to the Egg omelet, maida(all-purpose flour) is used along with besan(Chickpea flour). The texture, color, and taste are much closer to the actual egg omelet. But, if you are making it for a person who is on diet or has diabetes, you should skip maida. Use only besan, the chickpea flour. Add vegetables of your choice and like to make them more nutritious and healthy.
You can add as many vegetables to the Vegetable omelet as you want. It can be onion, tomatoes, carrots, mushrooms, bell peppers(green, red, yellow), etc. But, all the vegetables should be properly minced. So that, your omelet won’t get lumped up with big chunks of vegetables.
